Stuffed Vidalia Onion

  1. Place a piece of plastic wrap large enough to cover stuffed onion in a 1 1/2-quart casserole dish.
  2. Slice onion crosswise into 3 layers.
  3. Place bottom slice of onion on plastic wrap.
  4. Place butter in a 4-cup glass measure; microwave at High 20 seconds to melt.
  5. Stir in salt, pepper, stuffing mix and beef broth.
  6. Place a little less than 1/2 of the stuffing mixture on onion slice in casserole.
  7. Add center slice of onion.
  8. Top with most of remaining stuffing mixture, reserving 1 tablespoon.
  9. Top mixture with third onion slice.
  10. Spread remaining stuffing mixture over onion; pull up corners of plastic wrap and tie with string.
  11. Microwave at High 6 minutes.
  12. Let stand 6 to 8 minutes before serving.
