New Mexico Peanut Pie
- 1/2 c. sugar
- 1/4 c. firmly packed brown sugar
- 1/4 c. flour
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 3 c. milk
- 1/2 c. peanut butter chips
- 4 egg yolks
- 3 Tbsp. butter or margarine
- 1 1/2 tsp. vanilla
- 1 bag (7 1/4 oz.) chocolate covered peanuts, chopped
- Combine
- sugar, brown sugar, flour, cornstarch and salt in saucepan.
- Add
- milk
- and
- peanut
- butter chips gradually. Cook and
- stir on medium heat until thick and bubbly.
- Reduce heat; cook
- and
- stir
- 2tinutes.
- Beattgg
- yolks
- lightly intmall bowl.
- Stir
- 1 cup hot mixture into yolks gradually and
- return egg
- mixture
- to saucepan.tring to gentle boil. Cook
- and
- stir ontow heat 2 minutes.
- Remove from heat and stir in butter and vanilla.
- Pour mixture into baked pie shell and sprinkle with peanuts.
- Bake at 350u0b0 for 12 minutes.
- Cool to room temperature before serving.
