Turkey Escallopes With Plums
- 1 lb. turkey breasts, sliced thinly to 1/2 to 3/4-inch
- 6 oz. apple juice
- 6 Tbsp. soy sauce
- 6 Tbsp. dry sherry
- 1 large clove garlic, crushed
- 2 tsp. fresh chopped thyme or 1/2 tsp. dried thyme
- 1 Tbsp. butter
- 2 Tbsp. vegetable oil
- 3/4 lb. plums, washed, pitted and halved
- salt and pepper (only if desired, but avoid overpowering the marinade)
- Pound turkey if necessary between two sheets of waxed paper to uniform thickness.
- Place in a large bowl.
- Pour the apple juice, soy sauce, sherry, garlic and thyme over the turkey and mix gently.
- Cover and refrigerate overnight or for 3 to 4 hours. Remove turkey and reserve the marinade.
- Heat butter and oil in large skillet.
- Quickly brown turkey on both sides.
- (Be careful not to overcook.)
- Add the plums and reserved marinade.
- Cover and simmer gently 10 to 15 minutes.
- Garnish with fresh thyme and dusting of pepper and serve.
