Smoky Tomato Bisque
- 2 1/2 cups beef stock
- 1 (28 ounce) can crushed tomatoes
- 1 (6 ounce) can tomato paste
- 2 small smoked pork hocks
- 1 large onion, chopped
- 1 cubed medium potato
- 1 sliced carrot
- 1 small bell pepper, chopped
- 2 celery ribs, sliced
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon ground allspice
- 1/2 teaspoon curry powder
- 1 1/2 cups milk
- 2 tablespoons cornstarch
- 1 teaspoon sugar
- salt and pepper
- Combine all ingredients except milk, cornstarch, sugar and salt and pepper, in slow cooker; cover and cook on high 4-5 hours.
- Discard pork hocks.
- Process soup in food processor or blender until smooth; return to slow cooker.
- Cover and cook on high 10 minutes.
- Stir in combined remaining 1/2 cup milk, cornstarch, and sugar, stirring 2-3 minutes. Season to taste with salt and pepper.
