Meatloaf With Sauteed Mushrooms

  1. Preheat oven to 350u0b0F
  2. Oil 13x9x2-inch roasting pan.
  3. Heat 2 tablespoons oil in large nonstick skillet over medium-high heat.
  4. Add onions and sugar; saute until onions are deep golden brown, about 15 minutes.
  5. Stir in oregano and garlic.
  6. Add vinegar; cook until evaporated, about 2 minutes.
  7. Transfer to large bowl and cool.
  8. Add ground beef, pork, 1 cup crushed tomatoes and next 6 ingredients to onions.
  9. Mix with fork until just blended.
  10. Form meat mixture into 10-by-5-inch loaf shape in prepared pan.
  11. Bake 45 minutes.
  12. Spread remaining crushed tomatoes over meat loaf.
  13. Drizzle with 1 tablespoon oil.
  14. Bake until thermometer inserted into center registers 155u0b0F, about 1 hour.
  15. Cool 15 minutes.
  16. Meanwhile, heat 2 tablespoons oil in large skillet over medium-high heat.
  17. Add mushrooms; saute until tender, about 12 minutes.
  18. Season to taste with salt and pepper.
  19. Cut meat loaf into thick slices.
  20. Spoon mushrooms and pan juices over.
