Banana Rhubarb Crisp
- 2 medium-large bananas, cut in 1/4-inch slices
- 2 1/2 c. diced rhubarb
- 4 Tbsp. sugar
- 1/4 tsp. cinnamon
- generous dash of nutmeg
- 1/2 c. flour
- 1/2 c. graham cracker crumbs (about 6)
- 1 1/2 tsp. baking powder
- 1/4 c. butter, margarine or diet margarine
- 1 egg, slightly beaten
- 1/4 c. skim milk
- In
- a medium bowl combine bananas, rhubarb and 2 tablespoons sugar,
- cinnamon and nutmeg.
- Spoon the mixture into a well greased
- shallow baking dish.
- In a medium bowl, combine the flour,
- graham
- cracker
- crumbs and baking powder. With a pastry blender,
- cut
- in
- butter
- until
- mixture
- is crumbly. Combine egg
- and
- milk and stir in.
- Spoon batter evenly over fruit. Sprinkle 2 tablespoons sugar over top of batter.
- Bake 25 to 30 minutes at 400u0b0.
- Serve with ice cream.
- Serves 6.
