Moussaka (Greek)
- 2 onions, chopped
- 1 medium eggplant, pared and cut up
- 1 lb. hamburger
- oil as needed
- salt as needed
- 3 Tbsp. oil
- 3 Tbsp. flour
- 3/4 c. milk
- 3/4 c. stock
- 2 c. shredded cheese
- 1 tsp. nutmeg
- 1 or 2 eggs, separated with whites beaten stiff
- Saute in oil separately until done the onion, eggplant and hamburger.
- Drain; set aside.
- Salt to taste.
- Make a sauce with 3 tablespoons oil and the flour.
- Cook over low heat.
- Add the stock and milk; cook until thickened.
- Add a little to the egg yolks, then put the egg yolks in sauce.
- On a buttered casserole dish, layer eggplant, meat, cheese, sauce and nutmeg.
- Repeat layers. Beat egg whites; smear on top.
- Sprinkle a little cheese and nutmeg.
- Bake at 350u0b0 for 30 minutes, until bubbly.
