Microwave Vegetable Casserole
- 2 (10 oz.) boxes frozen French-style green beans
- 1 (4 1/2 oz.) can sliced mushrooms
- 1 (8 oz.) can water chestnuts, sliced
- 1 medium onion, sliced
- 1 (14 oz.) can bean sprouts, drained
- 2 (10 3/4 oz.) cans cream of mushroom soup
- 1 c. grated Cheddar cheese
- 1 (3 1/2 oz.) can French fried onion rings
- In a 2-quart casserole dish, combine frozen beans and onion. Pour 1/4 cup water over top, cover and microwave for 14 to 16 minutes until tender-crisp.
- Stir once during cooking.
- Drain well and combine remaining ingredients except the onion rings. Microwave for another 15 minutes, stirring and turning once during cooking.
- When cook time remaining hits the 2 minute mark, top casserole with the French fried onion rings.
