Golden Fruitcake(Makes One 5 Pound Or 3 Medium Loaves)

  1. Sift together flour, baking powder and salt.
  2. Reserve 1/4 cup and set aside.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Add sifted dry ingredients alternately with milk, beating well after each addition.
  6. Combine pecans, pineapple, raisins and cherries plus the 1/4 cup of flour/baking powder reserved before.
  7. Toss gently to coat.
  8. Stir into batter. Spread batter into greased, waxed paper lined 10-inch tube pan (or use 3 loaf pans).
  9. Bake at 275u0b0 for
  10. 2 hours and 45 minutes or until cake tests done (loaf pans take about 2 hours).
  11. Cool in pan for about 30 minutes.
  12. Remove and continue to cool on rack. Wrap tightly in foil and store in refrigerator or cool room.
