Vegetarian Broccoli Cheese Soup

  1. Melt 2 tbs butter in a sauce pan.
  2. Add carrot, onion & celery. Saute until soft (but not brown).
  3. In a separate pan, melt the other 2 tbs butter.
  4. Add flour and whisk quickly.
  5. Add 1 cup of cream and stir.
  6. Pour the flour mixture into the sauce pan with the carrot, onion & celery.
  7. Add the rest of the cream, the water & the garlic.
  8. Add the cheddar cheese.
  9. Add the goat cheese.
  10. Add the broccoli.
  11. Stir thoroughly.
  12. Add salt and pepper to taste.
