Sunday Night Skillet Supper
- 4 Tbsp. margarine
- 1 (16 oz.) frozen hash browns
- 1/3 c. onion, chopped fine
- 1/3 c. green pepper, chopped fine
- salt and pepper to taste
- 4 eggs, beaten
- 1 (12 oz.) pkg. bulk pork sausage
- 1/2 c. shredded Cheddar cheese
- Cook sausage and drain.
- Crumble and set aside.
- In separate skillet, melt margarine over low heat.
- Add hash browns, onion and green pepper.
- Sprinkle with salt and pepper.
- Cover and cook over low heat for 15 to 20 minutes.
- Keeping the skillet over low heat, pour eggs over mixture in skillet.
- Sprinkle sausage over eggs.
- Cover and cook until eggs are set, about 15 minutes. Sprinkle cheese on top.
- Cover and heat until cheese melts.
- Cut in wedges to serve.
- Serves 6.
