Family Favorite French Bread
- 2 pkg. active dry yeast
- 2 1/2 c. warm water (105~ to 115~)
- 1 Tbsp. salt
- 1 Tbsp. butter or margarine, melted
- 7 c. all-purpose flour
- 1/4 c. cornmeal
- 1 egg white
- 1 Tbsp. cold water
- Dissolve yeast in water in mixer bowl.
- Add salt, butter and flour.
- Using a dough hook mix until well blended, about 2 minutes. Mix on medium speed 2 minutes longer.
- Turn out on floured surface. Knead until smooth and elastic (about 10 minutes).
- Place in a greased bowl, turning to grease top.
- Cover; let rise in a warm, draft free spot about 1 hour.
- Punch down and divide in half.
- Roll each half into a 12 x 15-inch rectangle.
- Roll up dough tightly, tapering ends.
- Place loaves on greased baking sheet on top of cornmeal.
- Cover; let rise 1 hour.
- Make 4 cuts across loaves and bake at 450u0b0 for 25 minutes.
- Beat egg white with water, brush on loaves and bake 5 minutes longer.
- Cool on wire racks.
