Family Favorite French Bread

  1. Dissolve yeast in water in mixer bowl.
  2. Add salt, butter and flour.
  3. Using a dough hook mix until well blended, about 2 minutes. Mix on medium speed 2 minutes longer.
  4. Turn out on floured surface. Knead until smooth and elastic (about 10 minutes).
  5. Place in a greased bowl, turning to grease top.
  6. Cover; let rise in a warm, draft free spot about 1 hour.
  7. Punch down and divide in half.
  8. Roll each half into a 12 x 15-inch rectangle.
  9. Roll up dough tightly, tapering ends.
  10. Place loaves on greased baking sheet on top of cornmeal.
  11. Cover; let rise 1 hour.
  12. Make 4 cuts across loaves and bake at 450u0b0 for 25 minutes.
  13. Beat egg white with water, brush on loaves and bake 5 minutes longer.
  14. Cool on wire racks.
