Sharon'S Chili Chicken
- 2 whole chickens, cut into pieces
- 2 green peppers, cut in chunks
- 2 tomatoes, quartered
- salt to taste
- pepper to taste
- garlic powder to taste
- ginger powder to taste
- butter
- oregano to taste
- 1 lb. mushrooms, sliced
- 1/2 c. sherry wine
- 1/2 c. chili sauce
- Season chicken with salt, pepper, garlic powder, ginger and oregano.
- Dot with butter and brown on both sides under broiler. Sprinkle with oregano.
- Saute mushrooms in butter and garlic powder.
- Combine sherry and chili sauce in saucepan and simmer for a few minutes.
- Add tomatoes, green pepper and mushrooms to chicken and pour sauce over all.
- Bake, uncovered, at 350u0b0 for 45 minutes to 1 hour.
- Baste often with juices.
