Chicken Divan
- 3 whole chicken breasts (six 1/2 breasts)
- 2 bunches fresh asparagus
- 2 cans cream of chicken soup
- 1 c. mayonnaise
- 1/2 tsp. curry powder
- 1/4 tsp. each: chili powder, cumin and sage
- 1 tsp. lemon or lime juice
- 1 c. shredded Cheddar cheese
- 1/2 c. jalapeno Monterey Jack cheese, shredded
- 1/2 pkg. corn tortillas
- Cook chicken breasts one hour.
- Let cool.
- Cook bunches of asparagus and cut into bite-size pieces.
- Cut chicken and tortillas into bite-size pieces.
- Mix together soup, mayonnaise, seasonings and lemon juice.
- Mix two cheeses together.
- Layer in 9 x 13-inch casserole dish from the bottom to top:
- asparagus, chicken, tortilla, soup mixture, cheeses.
- Bake at 350u0b0 for 40 minutes.
