Green Chili Sauce
- 1 lb. pork pieces
- 1 clove garlic, chopped
- 3 Tbsp. salad oil
- 1/4 c. chopped onion
- 2 Tbsp. flour
- 1 medium tomato, chopped
- 1 Tbsp. wine vinegar
- 1 c. pork stock
- 2 Tbsp. green chilies, finely chopped
- dash of ground cumin
- 1/2 tsp. salt
- dash of pepper
- Cook pork in a little water until tender, about 1/2 hour.
- In hot oil in a skillet, cook pork (drained and cut up) until lightly browned.
- Add garlic and onion; cook until golden, about 5 minutes.
- Remove from heat.
- Stir in flour until smooth.
- Stir in pork stock; bring to a boil, stirring over medium heat.
- Add remaining ingredients; simmer, uncovered, and stir about 5 minutes.
- Serve over burritos.
