Bay State Breakfast Muffins
- 2 c. shredded, unpeeled apples
- 1 1/3 c. sugar
- 1 c. chopped cranberries
- 1 c. shredded carrots
- 1 c. chopped walnuts
- 2 1/2 c. unbleached flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. coriander
- 2 large eggs, beaten
- 1/2 c. vegetable oil
- Mix apples and sugar.
- Set aside.
- Grease muffin tin.
- Preheat oven to 375u0b0.
- Add cranberries, carrots and nuts to apple mixture and stir gently to combine.
- Mix dry ingredients and add to apple mixture.
- Stir well.
- Stir in eggs and oil and mix gently.
- Divide among muffin cups.
- Bake 25 minutes.
- Cook for 5 minutes in pan and remove to wire rack.
- Makes 12 muffins.
