Confetti Egg Bake

• 1/2 cup cheddar cheese, shredded
• 1 (9 ounce) package frozen chopped spinach, thawed and drained
• 1/2 lb ground sausage, cooked
• 1 cup sliced mushroom
• 1/2 cup chopped green onion
• 1 (2 ounce) jar sliced pimiento, drained
• 6 eggs, beaten
• 1 cup half-and-half
• 1/2 cup shredded swiss cheese
• 1/2 teaspoon paprika

1. Preheat oven to 350u0b0F.
2. Spray 8 inch (1 1/2 quart) square baking dish with non-stick cooking spray.
3. Layer Cheddar cheese, spinach, sausage, mushrooms, onions and pimiento in baking dish.
4. Mix eggs and half and half until blended.
5. Pour egg mixture evenly over ingredients in baking dish.
6. Evenly sprinkle Swiss cheese and paprika over dish.
7. Bake for 30-40 minutes or until knife inserted comes out clean.
8. Let stand 5 minutes before serving.
