Easy Tortilla Bake
- 6 flour tortillas (8 inches in diameter)
- 1 lb. lean or regular ground beef
- 1 medium onion, chopped (about 1/2 c.)
- 1 (1 1/4 oz.) envelope taco seasoning mix
- 1 (8 oz.) can tomato sauce
- 2 c. shredded Cheddar cheese (8 oz.)
- 1 1/4 c. milk
- 3 eggs
- 1 c. Bisquick original baking mix
- Heat oven to 375u0b0.
- Grease a 13 x 9 x 2-inch rectangular pan. Line pan with tortillas, bringing edges of tortillas up even with the edge of pan.
- Cook ground beef and onion in 10-inch skillet, stirring frequently, until beef is brown; drain.
- Stir in seasoning mix (dry) and tomato sauce.
- Spoon beef mixture over tortillas. Sprinkle with cheese.
- Beat milk, eggs and baking mix in blender on high speed about 15 seconds or with wire whisk or hand beater for 1 minute until smooth.
- Pour over beef mixture.
- Bake 35 to 40 minutes or until knife inserted in center comes out clean.
- Cool 10 minutes before cutting.
- Serve with chopped tomato, shredded lettuce and sour cream (if desired).
- Makes 8 servings.
