Peaches And Cream Cheesecake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 3 1/4oz. box vanilla pudding (not instant)
- 3 Tbsp. soft butter
- 1 egg
- 1 8oz. soft cream cheese
- 1/2 c. sugar
- 1 can sliced peaches
- 3 Tbsp. peach juice (saved from can)
- 1 Tbsp. sugar
- 1/2 tsp. cinnamon
- Beat flour, baking powder, soda, pudding, butter and egg for 2 minutes at medium speed, then pour into 8-inch deep dish or 10 pie pan.
- Drain the can of peaches, saving juice.
- Put peaches on top of mixture in pan.
- Beat cream cheese, sugar and peach juice. Spoon onto the top of peaches within 1 of edge.
- Mix 1 Tbsp. sugar and cinnamon, sprinkle over cheese mixture.
- Bake 350u0b0 for 30-35 minutes until crust is golden brown - filling appears soft.
- Keep refrigerated.
