Taco Rice Skillet
- 1 lb. hamburger
- 1 medium onion, chopped
- 1 (16 oz.) can sliced tomatoes
- 1 c. converted brand rice
- 1 (1 1/4 oz.) pkg. taco seasoning mix
- 1 c. shredded Cheddar cheese
- 2 c. shredded lettuce
- sour cream
- 1 to 2 avocados, chopped
- 1 bag nacho chips
- Brown hamburger with onion in 10-inch skillet with lid.
- Drain fat off.
- Drain tomatoes into a 2 cup measuring cup, reserving juice.
- Chop up tomatoes and place them in a separate dish.
- Add water to juice to make 2 1/2 cups liquid.
- Add liquid, rice and taco seasoning to hamburger; stir.
- Bring to a boil.
- Reduce heat, cover and simmer until liquid is absorbed, about 25 minutes.
- Stir occasionally.
- Place chips on plate.
- Add hamburger mixture and top with cheese, lettuce, avocados, tomatoes and sour cream.
