Stuffed Zucchini(Zucanoes)

  1. Scoop out the insides of the zucchini to leave a 1/4 to 1/2-inch of rim. Chop innards into small bits and cook in margarine with onions, garlic, salt and pepper until onions are soft. Drain excess liquid. Combine with flour, cheeses, parsley and beaten eggs. Fry hamburger; drain and add to the vegetable and cheese filling. Fill zucchini and dust top with paprika. Place in a 9 x 13 pan. Bake at 375u0b0 for 30 minutes.
