Fiesta Corn Relish

  1. Peel husks and silks from corn.
  2. Place ears in a kettle; pour in boiling water to cover.
  3. Heat to boiling again; cook 5 minutes; drain.
  4. Cool until easy to handle, then cut corn from cobs. (There should be 8 cups.)
  5. Combine corn with remaining ingredients in kettle; heat, stirring several times, to boiling.
  6. Cook, uncovered for 20 minutes.
  7. Ladle into hot sterilized jars; seal following manufacturer's directions.
  8. Cool jars, label and date.
