Greek Feta Cheese Triangles

  1. Thaw puff pastry for 20 minutes.
  2. In a bowl, mix cheese, eggs and parsley until well blended.
  3. Unfold 1 puff pastry sheet and, on a lightly floured surface, roll to a 9 x 12-inch rectangle.
  4. Cut into 3-inch squares.
  5. Put 1 tablespoon cheese filling in the center of each square.
  6. Moisten edges with water and fold pastry in half forming a triangle.
  7. Press edges together firmly with tines of a fork to seal.
  8. Chill.
  9. Repeat with remaining pastry sheet and cheese mixture.
  10. Place triangles on an ungreased cookie sheet and bake in a preheated 425u0b0 oven for 8 to 10 minutes or until puffed and golden brown.
  11. Serve warm or at room temperature.
  12. Makes 24.
