Quick Vegetable Gumbo

  1. Heat oil over med heat in a 4 qt dutch oven until hot.
  2. Add bell pepper, celery, onion and garlic.
  3. Stir until crisp tender.
  4. Add Tomatoes, juice, beans, parsley, oregano, pepper sauce and bay leaves.
  5. Bring to boil over high heat.
  6. Add rice.
  7. Cover and reduce heat to simmer.
  8. Simmer 15 minutes or until rice is cooked.
  9. Add okra.
  10. Cover and cook 5 minutes longer or until okra is tender.
  11. Remove bay leaves.
