Clam Patties
- 1 c. clams
- 1/4 c. milk or cream
- 1 clove garlic, minced
- 2 Tbsp. grated Mozzarella cheese
- 1 c. oil or butter
- 1/2 c. sifted flour
- salt and black pepper to taste
- 4 eggs
- 2 Tbsp. chopped parsley
- 1 tsp. oregano
- 1/2 c. Parmesan cheese
- 1/2 c. bread crumbs (Italian)
- Use canned or fresh clams.
- Chop, but do not make small pieces. Beat eggs and milk for 1 minute.
- Add garlic, oregano, parsley, salt, pepper and cheese to egg mixture and set aside.
- Next put oil in frying pan and heat.
- Mix flour and bread crumbs in bowl.
- Place clams in and coat with crumb mixture.
- Spoon this into the egg mixture and place in oil by spoonfuls (large tablespoon).
- Fry on each side about 1 minute.
- Clam patties should be golden brown on both sides.
- Serve on crusty roll or bread.
