Tennessee River Mud Pie
- 1 c. flour
- 1 c. chopped pecans
- 1 stick margarine, softened
- 1 c. confectioners sugar
- 1 (8 oz.) pkg. cream cheese, softened
- 1 large carton Cool Whip
- 1 large pkg. chocolate instant pudding mix
- Put a can of Eagle Brand or Carnation condensed milk in deep saucepan filled
- with
- water (be sure can is covered with water all the time).
- Bring water to a boil, then simmer for 2 1/2 hours.
- Be sure
- to
- watch and be sure water covers it all the time.
- Take out
- of water and let cool, then open can.
- It will be caramelized.
- Spoon
- into
- baked
- plain pie shell or a graham cracker
- crust.
- Let
- cool
- completely, then cover with Cool Whip or
- whipped
- cream.
- Refrigerate.
- (Very
- rich
- and delicious.)
