Oatmeal Bread
- 2 c. boiling water
- 2 c. oatmeal
- 1 Tbsp. margarine or butter
- 1/2 c. molasses
- 1 pkg. yeast
- 1/2 c. warm water
- 2 eggs, beaten
- 5+ c. flour
- butter, melted
- oatmeal
- Dissolve yeast in warm water.
- Pour boiling water over oatmeal. Cool until warm.
- Add butter, molasses and yeast mix.
- Blend in eggs.
- Gradually mix in flour, adding enough to make a smooth dough.
- Knead for 10 minutes on floured board.
- Place in greased bowl; cover and let rise until double in size.
- Punch down.
- Shape into 2 loaves.
- Place into greased loaf pans.
- Paint top with melted butter and sprinkle with oatmeal.
- Cover and let rise to double.
- Bake at 350u0b0 for 40 to 45 minutes or until done.
- Serves 20 slices.
