Thai-Fried Rice
- 4 Tbsp. peanut oil
- 2 medium onions, chopped
- 2 garlic cloves, minced
- 1/2 lb. pork, diced
- 4 eggs, beaten with salt and pepper
- 4 c. cooked rice
- 2 Tbsp. fish sauce
- 2 Tbsp. soy sauce
- 1 Tbsp. chili sauce
- 1 green pepper, chopped
- 1 tomato, chopped
- 5 scallions, chopped
- 1/2 lb. cooked shrimp or chicken
- Heat oil in wok or large frypan and fry onion and garlic until golden.
- Add the pork and stir-fry until just cooked through.
- Make a hole in center or pork and pour in seasoned eggs; scramble.
- Toss in rice and stir.
- Sprinkle the fish, chili and soy sauces over mixture.
- Then add the green pepper, tomato, scallions and shrimp, stirring until mixed.
