Hail To The Chief
- 1 (10 oz.) pkg. frozen early peas with butter sauce
- 1/2 lb. Italian sausage or spicy sausage, sliced
- 1 small onion, sliced
- 1/2 garlic clove, minced
- 1 (16 oz.) can whole tomatoes, cut up (undrained)
- 1 1/2 c. cooked, cubed chicken
- 1/2 c. sliced celery
- 1/4 c. sliced black olives
- 1/2 tsp. Worcestershire sauce
- 1/4 tsp. hot pepper sauce
- 1 1/2 c. cooked white rice
- In bowl of warm water, thaw pea pouch for 20 minutes.
- In large skillet, cook sausage until browned; drain.
- Stir in onion and garlic; cook until golden, about 3 minutes.
- Stir in tomatoes, chicken, celery, olives, Worcestershire sauce and hot pepper sauce. Bring mixture to a boil; cover and simmer 20 minutes.
- Stir in rice and thawed peas.
- Cover and continue cooking 5 minutes or until rice and peas are thoroughly heated.
- Makes 4 servings.
