Rajmah (Curried Red Kidney Beans)
- 1 chopped onion
- 2 (16 ounce) cans red kidney beans, drained
- 1/2 cup crushed tomatoes (fresh or canned)
- 1 tablespoon oil
- Seasonings
- 1 teaspoon chopped ginger
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon black pepper
- Garnish
- 2 tablespoons chopped green coriander
- Heat the oil in a saucepan on medium to high heat.
- Add chopped onions and stir until they are translucent.
- Add ginger, cumin powder and coriander powder.
- Stir for a minute.
- Add the tomatoes, kidney beans, and red chili powder.
- Add water as needed.
- Boil and let it simmer for 15 minutes until the gravy is thick.
- Add black pepper and garam masala to make it spicy.
- Serve garnished with green coriander.
