Skillet Chicken And Peaches
- 2 Tbsp. oil
- 2 lb. chicken pieces, skinned
- 1/2 c. sliced onions
- 1 clove garlic, minced
- 1 can (10 oz.) mushrooms
- 1 can (14 oz.) sliced peaches
- 1 c. water
- 1 Tbsp. chicken bouillon
- 1/2 tsp. ground ginger
- 1 Tbsp. cornstarch
- In a large skillet or electric frying pan heat oil.
- Brown chicken.
- Remove to a platter.
- Saute onions, garlic and mushrooms, just until onion is limp.
- Add peaches with juice. Into the water stir bouillon cube, ginger and cornstarch until dissolved.
- Add to peach mix.
- Simmer until mixture is thickened. Return chicken to skillet.
- Cover, simmer for 25 minutes until chicken is completely cooked.
- Serve over rice or egg noodles. Makes 4 servings.
