Soup Tortellini
- 1 lb. loose Italian sausage (sweet or hot)
- 1 c. minced onions
- 2 cloves garlic
- 5 c. beef broth
- 2 c. water
- 1/2 c. red wine
- 2 c. (large can) peeled tomatoes
- 1 c. sliced carrots
- 1 tsp. basil
- 1/2 tsp. oregano
- 8 oz. can tomato sauce
- 1 1/2 c. sliced zucchini
- 8 oz. tortellini
- 3 Tbsp. parsley
- 10 peppercorns
- 1 can chickpeas with liquid
- 1 can Italian green beans, drained
- Brown sausage in a large pot separating into small pieces. Saute onion and garlic.
- Add beef broth, water, wine, carrots, basil, oregano, tomatoes, tomato sauce, parsley and peppercorns. Simmer 1 hour.
- Add zucchini and tortellini and simmer 30 to 40 more minutes.
- Add chickpeas and green beans the last 10 minutes.
