Nacho Casserole
- 1 to 2 lb. lean ground beef
- 1 pkg. chili seasoning
- about 2 c. shredded lettuce
- 1 large can tomatoes, diced
- 1 can red kidney beans
- approximately 1 lb. shredded mild Cheddar cheese
- 1 bag white corn tortilla chips (9 oz.)
- 1 large yellow onion, finely chopped (optional)
- Brown ground beef in frying pan.
- Drain grease.
- Add chili seasoning to taste.
- Cover bottom of casserole dish with 1/2 ground beef mixture.
- Sprinkle with cheese.
- Drain juice from kidney beans and spread over cheese.
- Sprinkle with cheese.
- Cover beans and cheese with tortilla chips.
- Cover chips with remaining ground beef, then sprinkle with cheese.
- Bake at 350u0b0 until cheese is melted (10 to 15 minutes).
- Remove from oven.
- Sprinkle with diced tomatoes, then add onion (if desired).
- Cover with lettuce. Decorate with black olives, remaining tortilla chips and dollops of sour cream as desired.
