Beef And Squash Strata(Serves 6)
- Italian meat sauce*
- 1 lb. zucchini
- 1 Tbsp. butter
- garlic salt
- 2 medium tomatoes, thinly sliced
- 1 pt. small curd cottage cheese
- 2 eggs
- 1/2 c. grated Parmesan or Romano cheese
- 1/2 c. shredded Gruyere or Samsoe
- 2 green onions, chopped
- Prepare meat sauce as directed.
- Trim ends from zucchini and thinly slice on the diagonal.
- Stir-fry in butter 2 to 3 minutes or until crisp-tender.
- Place in a buttered 10-inch round baking dish. Sprinkle lightly with garlic salt.
- Spoon meat sauce over zucchini. Cover with a layer of tomatoes.
- Beat cottage cheese and eggs together.
- Stir in Parmesan cheese, Gruyere and onions.
- Pour over tomatoes.
- Bake in a 375u0b0 oven for 35 minutes or until set and lightly browned.
- Cut into wedges.
