Pasta Broccoli Toss
- 4 c. rotini pasta
- 3 c. broccoli florets
- 2 Tbsp. oil
- 1 sweet yellow pepper chopped
- 1 onion chopped
- 4 garlic cloves minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. white sugar
- 1/2 c. basil shredded
- 4 tomatoes chopped
- 1/4 c. romano cheese grated
- In large sauce pan, cook rotini as directed in boiling salt water for 6 minutes.
- Add broccoli, cook 2 to 3 minutes.
- Drain. Reserve 1/4 c. of the liquid.
- Return pasta to pan.
- Meanwhile heat oil in saucepan; add pepper, onion and garlic, cook about 5 minutes.
- Stir in reserved liquid, salt, pepper and sugar; bring to a boil.tour mixture over pasta and broccoli mixture; add tomatoes, basil and cheese.
- Toss and serve.
- Serves 4.
