Cajun French Cabbage Rolls
- 1 1/2 c. chopped onions
- 1 1/2 c. chopped celery
- 1/4 lb. oleo
- 1 c. cooked cabbage
- 1 c. cooked rice
- 3/4 lb. ground beef
- 1 tsp. tomato paste
- 1 small can tomato paste
- 1 small can tomato sauce
- 3 lb. head cabbage
- 1/2 c. cooking oil
- salt, pepper and cayenne to taste
- 4 cloves garlic, chopped
- Brown ground beef and drain.
- Add onions, celery and garlic and cook until wilted.
- Remove 12 outer leaves from cabbage; parboil these for 15 minutes.
- Drain and set aside; cut up center of cabbage (not the core) to equal 1 cup.
- Cook until tender and add to meat mixture with 1 teaspoon tomato paste.
- Add rice; mix and stuff cabbage leaves.
- Secure with toothpicks.
