Butterscotch Banana Muffins

  1. Combine dry ingredients, including oatmeal and mix well.
  2. In a separate bowl, combine the banana, egg, milk, oil and flavoring and blend well.
  3. Add the wet ingredients to the dry ingredients and stir until just moistened.
  4. Add the butterscotch chips.
  5. Spoon batter into a well greased or lined muffin tin filling 3/4 full.
  6. Bake at 400 degrees for 14-16 minutes.
  7. Remove from pan and cool on a wire rack.
