Missouri Beef Skillet
- 1 lb. ground beef
- 3/4 c. chopped onions
- 1 (16 oz.) can chopped tomatoes
- 1 (15 oz.) can red kidney beans
- 1/2 c. quick cook rice
- 1 1/2 tsp. chili powder
- 3 Tbsp. chopped green peppers
- 1/2 tsp. garlic salt
- 1/2 tsp. salt
- 1/2 c. water
- 3/4 c. shredded American cheese
- 1 bag slightly crushed corn chips
- In skillet, cook ground beef and onions until meat is brown and onions are tender. Drain fat.
- Stir in undrained tomatoes, kidney beans, then water, rice and green peppers.
- Add chili powder, salt and garlic; bring to a boil, then reduce heat.
- Cover and simmer 20 minutes.
- Top mixture with cheese and corn chips. Serve when cheese is melted.
