Sweet Potato Daisy Biscuits
- 3 c. Bisquick baking mix
- 1/2 tsp. grated orange peel
- 1 (3 oz.) pkg. cream cheese, cubed and chilled
- 1/2 c. cooked, mashed sweet potatoes
- 1/2 c. milk
- orange marmalade
- Heat oven to 450u0b0.
- Combine baking mix and orange peel; cut in cream cheese until mixture resembles coarse meal.
- Add sweet potatoes and milk, stirring until dry ingredients are moistened. Turn dough out onto surface dusted with baking mix.
- Shape into ball; knead 4 to 5 times.
- Roll dough 1/2 inch thick.
- Cut with cutters dipped in baking mix.
- Place about 2 inches apart on ungreased cookie sheet.
- With sharp knife dipped in baking mix, cut six 1/2 inch lashes around edge of each biscuit to form petals. Using thumb, make indentation in center of each biscuit and fill with about 1/4 teaspoon of marmalade.
- Bake 8 to 10 minutes or until golden brown.
