Lotsa Pepper Relish(Makes 6 One-Cup Jars)
- 3 medium size red bell peppers
- 2 medium size green bell peppers
- 10 large jalapeno peppers
- 1 c. cider vinegar
- 5 c. sugar (measure exactly)
- 1 box powdered fruit pectin
- 1/2 tsp. margarine or butter
- Stem and halve peppers; discard seeds.
- (It's best to wear plastic gloves when handling hot peppers.)
- Finely chop peppers and measure 4 cups mixed peppers into a 6 or 8-quart saucepan.
- Stir in vinegar.
- Measure sugar into a separate bowl and set aside.
- Stir pectin into peppers, then add margarine.
- Bring mixture to full, rolling boil over high heat, stirring constantly.
- Quickly stir in sugar.
- Return to full boil and boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Skim off any foam with a metal spoon.
- Quickly ladle mixture into hot clean jars, filling to within 1/8-inch of top.
- Wipe jar rims and threads.
- Cover with 2 piece lid.
- Screw on bands until tight.
- Invert jar 5 minutes, then turn upright.
- Cool 1 to 1 1/2 hours, then shake jars gently to distribute peppers evenly.
- Check seals after jars cool.
