Lotsa Pepper Relish(Makes 6 One-Cup Jars)

  1. Stem and halve peppers; discard seeds.
  2. (It's best to wear plastic gloves when handling hot peppers.)
  3. Finely chop peppers and measure 4 cups mixed peppers into a 6 or 8-quart saucepan.
  4. Stir in vinegar.
  5. Measure sugar into a separate bowl and set aside.
  6. Stir pectin into peppers, then add margarine.
  7. Bring mixture to full, rolling boil over high heat, stirring constantly.
  8. Quickly stir in sugar.
  9. Return to full boil and boil exactly 1 minute, stirring constantly.
  10. Remove from heat.
  11. Skim off any foam with a metal spoon.
  12. Quickly ladle mixture into hot clean jars, filling to within 1/8-inch of top.
  13. Wipe jar rims and threads.
  14. Cover with 2 piece lid.
  15. Screw on bands until tight.
  16. Invert jar 5 minutes, then turn upright.
  17. Cool 1 to 1 1/2 hours, then shake jars gently to distribute peppers evenly.
  18. Check seals after jars cool.
