Orange Pork Tenderloin

  1. Mix butter, thyme and cayenne pepper. Spread evenly over tenderloin.
  2. Place tenderloin in shallow roasting pan and pour 3/4 cup orange juice over meat.
  3. Roast in a 375u0b0 oven for 25 to 30 minutes to 155u0b0 to 160u0b0 on meat thermometer, basting occasionally. Remove meat to serving platter.
  4. Keep warm.
  5. Measure basting liquid into small saucepan, adding additional orange juice, if necessary, to make 3/4 cup.
  6. Quickly whisk in flour, sugar and butter. Cook and stir until mixture boils and thickens. Cut tenderloin in 1-inch slices and serve with sauce.
  7. Makes 4 servings.
