Chicken And Chips Appetizer
- 1/3 c. milk
- 1 egg
- 1 1/4 c. (16 oz. bag, crushed) sour cream and onion potato chips
- 1/4 tsp. onion powder
- 1/4 tsp. pepper
- 1 1/2 lb. boneless and skinned chicken breasts, cut into strips or hunks
- 2 Tbsp. butter or margarine, melted
- Preheat oven to 400u0b0.
- In small bowl, beat together the milk and egg with fork until well mixed.
- In a shallow dish, combine the crushed potato chips, onion powder and pepper.
- Dip chicken pieces into the egg mixture, then roll them into the potato chip mixture. Arrange coated pieces in a single layer in a baking pan that has been coated with nonstick vegetable spray.
- Repeat until all the chicken is coated.
- Let sit at room temperature for 15 minutes, then drizzle with melted butter and bake for 10 to 15 minutes, until firm and golden brown.
- Yield: 4 to 6 servings (18 to 20 appetizer-sized pieces).
