Crispy Oat Cookies
- 1 c. butter or margarine, softened
- 1 c. white sugar
- 1 c. firmly packed brown sugar
- 1 egg
- 1 c. vegetable oil
- 1 tsp. vanilla extract
- 3 1/2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. regular oats (uncooked)
- 1 c. crushed corn flakes
- 1 c. flaked coconut
- 1 c. chopped pecans or walnuts
- Cream the butter; gradually add sugars, beating well at medium speed.
- Add egg and beat well.
- Add oil and vanilla, mixing well. Combine flour, soda and salt.
- Add to mixture and mix well.
- Stir in oats and remaining ingredients.
- Shape dough into 1-inch balls. Place on ungreased cookie sheets, flattening each ball with the tines of a fork.
- Bake at 325u0b0 for 15 minutes.
- Cool slightly. Remove from cookie sheets and cool on wire racks.
- Yields 10 dozen.
