Blackberry Jam Cake
- 1 c. butter or margarine
- 1 1/2 c. sugar
- 4 eggs, beaten
- 1 (12 oz.) jar blackberry jam
- 1 c. buttermilk
- 2 tsp. baking soda
- 3 c. all-purpose flour
- 1 Tbsp. cocoa
- 1/2 tsp. ground nutmeg
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 c. raisins
- 1/2 c. chopped nuts
- caramel frosting
- Cream together butter and sugar until fluffy.
- Combine eggs and jam; mix well.
- Add to creamed mixture; beat well.
- Combine buttermilk and soda; set aside.
- Combine dry ingredients; mix alternately with creamed mixture and buttermilk mixture.
- Mix well. Stir in raisins and pecans.
- Pour into 3 greased and floured 8-inch cake pans.
- Bake at 350u0b0 for 35 or 40 minutes or until toothpick comes out clean.
