Helen Leatherwood'S Pear Relish

  1. Put pears, onions, peppers and pimento through a grinder on medium setting.
  2. Sprinkle salt over the ground mixture.
  3. Soak overnight (no water).
  4. Next morning, pour all in a colander. Rinse all salt out. In a large container, put vinegar, sugar, turmeric and mustard seed.
  5. Bring to a boil and let boil 5 minutes.
  6. Add all ground ingredients, stirring constantly.
  7. Return to boil.
  8. Add celery seed and garlic powder, if desired.
  9. Let boil another 1/2 hour.
  10. Jar while hot and seal.
