Bagels

  1. Sift together flour and salt.
  2. Soften yeast in 2/3 cup of potato water.
  3. Add to flour and salt.
  4. Add honey, oil and 1 1/3 cups potato water.
  5. Add lightly beaten eggs.
  6. Beat into a dough. Knead for 10 minutes.
  7. Let rise at room temperature unti double in bulk (1 1/2 to 2 hours).
  8. Knead dough until smooth and elastic. Roll pieces of dough and make into bagels (doughnut shape).
  9. Add sugar to boiling water.
  10. Drop bagels into boiling water (a few at a time).
  11. Bagel should sink.
  12. When it rises, turn over and boil one minute longer.
  13. Place on a greased cookie sheet.
  14. Bake in 450u0b0 oven for 10 to 15minutes, or until golden brown.
