German Spice Bars(Lebkuchen)
- 1 1/3 c. honey (you can substitute some molasses for honey)
- 3/4 c. sugar
- 3 Tbsp. butter
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. soda (if using some molasses)
- 1/2 c. blanched almonds (optional)
- 1/4 c. each: chopped citron, candied orange and lemon peel
- 1 1/2 to 2 c. more flour
- 1/4 tsp. ginger
- 1/2 tsp. cardamon
- 2 tsp. cinnamon
- 1/8 tsp. cloves
- Heat honey and sugar slightly in a pan.
- Add butter.
- Add 2 cups flour and baking powder; beat well.
- Add nuts, citron, peels and spices.
- Add 1 1/2 to 2 more cups flour until you have a thick, pliable dough.
- Pat it 1/4 inch thick into pans (three 8 x 8-inch cake pans and one 9 x 9-inch cake pan).
- Bake about 25 minutes. When cool, cut in squares and ice with Lemon Glaze.
- Make this ahead for Christmas.
- Keeps 6 months when in an airtight container!
