Banana-Honey Bread(Makes 1 Large Loaf)
- 1 1/2 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. All-Bran or a similar bran cereal
- 1/4 c. chopped walnuts
- 1 egg
- 1/2 c. honey
- 1/4 c. vegetable oil
- 1/4 c. milk
- 1 1/2 c. mashed ripe bananas (about 3 bananas)
- Preheat oven to 350u0b0.
- In a 2-quart mixing bowl, sift together the flour, baking powder, soda and salt into a large bowl.
- Stir in cereal and nuts.
- In a small bowl, beat the egg lightly.
- Beat in the honey, oil, milk and bananas.
- Add banana mixture all at once to dry ingredients and stir until flour is just damp.
- Spoon batter into a greased 9 x 5 x 3-inch loaf pan. Bake for 1 hour or until a cake tester inserted into the center of the loaf comes out clean.
- Cool the loaf in the pan on a wire rack for 10 minutes.
- Remove from the pan and cool completely.
- Wrap in foil or plastic.
- This bread freezes well.
