Mexican Pie
- 1/2 lb. ground beef
- 1 medium green pepper, chopped
- 1/4 c. chopped onion
- 1 (8 oz.) jar Cheez Whiz pasteurized process cheese spread
- 1 1/2 tsp. chili powder
- 1/2 c. chopped tomato
- 2 eggs, beaten
- 3/4 c. flour
- 1/2 tsp. salt
- 1/3 c. milk
- 1 Tbsp. corn meal
- Brown meat; drain.
- Add green pepper and onion.
- Cook until tender.
- Add half of process cheese spread and chili powder.
- Stir over low heat until process cheese spread is melted.
- Stir in tomato; combine remaining process cheese spread, eggs, flour, salt and milk.
- Beat until smooth.
- Pour into greased 9-inch pie plate. Sprinkle with corn meal.
- Spoon meat mixture over batter to within 1-inch of edge.
- Bake at 400u0b0 for 25 to 30 minutes or until golden brown.
- Let stand 5 minutes before serving.
