Cherry-Pecan Dessert
- 1 (16 oz.) can pitted tart red cherries (water pack)
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1 egg
- 1 Tbsp. margarine or butter, melted
- 1/4 c. sugar
- 1/4 tsp. salt
- 2 drops almond extract
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. sugar
- 1/2 tsp. almond extract
- 1/2 c. chopped pecans
- 1 Tbsp. cornstarch
- 1 Tbsp. margarine or butter
- Drain cherries, reserving liquid.
- Add enough water to cherry liquid to equal 1 cup; set aside.
- In a bowl, combine flour, cinnamon, soda and 1/4 teaspoon salt.
- Combine cherries and 2 tablespoons of the dry ingredients.
- Beat egg until thick and lemon colored.
- Gradually add 1 cup sugar.
- Beat 5 minutes.
- Stir in remaining dry ingredients until combined.
- Stir in 1 tablespoon melted margarine and almond extract.
- Stir in cherry mixture. Transfer to greased 9 x 9 x 2-inch baking pan.
- Top with pecans. Bake in 325u0b0 oven for 45 to 50 minutes or until golden.
